Chocolate Zucchini Bread


 Cuando leí esto, tuve que hacerlo dos veces porque no me lo creía! Pan de chocolate y calabacín.... no guanté la tentación y llamé a mi Cheli (para los que no saben, es como llamo a mi esposo) que estaba en la calle y le pedí que me trajera polvo de cacao sin azúcar que era el único ingrediente de la receta que no tenía. A pesar de que era un poco tarde y de que al día siguiente había que madrugar (más de lo acostumbrado) me puse manos a la obra y lo hice con la ayuda de mis little helpers- Fiona & Joaquín.

 When I read the title, I had to do it twice because I couldn´t believe my eyes. Chocolate Zucchini Bread.... I just couldn´t wait and called my Cheli (for those of you who don´t know, it´s how I call my husband) and asked him if he could bring cocoa powder- the only ingredient of the recipe that I didn´t have. Even though it was late and that we had to wake up early, I baked it with the help of my two little chefs- Fiona & Joaquín.




 Lo bueno de haber hecho este pan- aunque una vez listo debo decir que me parece mas una torta que un pan- con los kiddos es que vieron desde el principio los ingredientes que tenía. Vieron que llevaba tanto cambur (plátano) que mi Joaco machacó con mucha emoción, como calabacín rallado, que Fiona llevó a cabo como todo una chef, a parte de los demás ingredientes clásicos de una torta.

The best part about making this bread-although I must say that once done it looks more like a cake than a bread- with the kids is that they saw what was in it from the beginning. They saw that it had bananas, which Joaco smashed heartedly and zucchini, that Fiona grated like a pro; a part from the traditional ingredients in a cake.


Una vez batida, se le ven los pedacitos verdes... me preocupé un poco porque la verdad es que no estaba segura de como quedaría después de horneardo.

Once beaten, you can see the tiny little green pieces... I was a little worried because I wasn´t sure how it would turn up after baking.


 Como cuando hice la torta de tomate no se me desmoldó, esta vez le puse un poco más de margarina y con un papel de cocina para que se le untara bien por todos lados- debo comprar una brocha y ver si consigo cooking spay que seguro tiene menos calorías. Esta vez tuve mejores resultados! La torta se desmoldó perfectamente y quedó bellísima.

 Last time, when I baked the tomato cake it didn´t come off the pan. So, this time I used a little more margarine and spread it with some kitchen towels to make sure I did it right- I guess I must buy a brush or some cooking spray that probably has a lot less calories. This time the result was way better. The cake came off perfectly and it was beautiful.


Si debo decirles que al principio quedé un poco desilusionada. Como estaban empeñados en que la querían comer, la corté y probé cuando aun estaba caliente. Si la hacen no se les ocurra hacerlo. No sabe a nada. Es casi como comer aire. No me sabía a chocolate aunque tenía el aspecto de las más suculentas y engordativas de las tortas de chocolate, tampoco sabía a cambur y obvio que a zucchini no iba a saber... como no es que lleve mucha azucar pues tampoco estaba dulce. Pensé que quizá lo que le faltaba era sal para que se le resaltaran los sabores y bueno, como la hice en molde redondo porque es el que tengo, no se parecía a en nada a un PAN! Me acosté pensando que al menos me había quitado la curiosidad y que ya sabía que, al menos esa, no formaría parte de mis recetas estrella.

 I must say that at first I was a little disappointed. Since they wanted to eat it right away I sliced and tasted it while it was still warm. If you bake it don´t even think about doing what I did. It´s tasteless. It's almost like eating air. It didn´t taste like chocolate although it looked like the most decadent and  succulent chocolate cake. It didn´t taste like banana either and it was obvious it wasn´t going to taste like zucchini... Since it doesn´t have a lot of sugar it wasn´t sweet. I thought that perhaps it was missing a little bit more of salt so it could bring out the flavors and well, since I baked it in a round pan (it´s the only one that I have) it didn´t look like a BREAD either! I went to bed thinking that I at least wan´t curious anymore, and that it wouldn´t make the cut as part of my star recipes.

 Sin embargo, la mañana siguiente, cuando llegue de la calle y la ví, tan bonita y chocolatosa y yo con los munchies a millón decidí darle una segunda oportunidad- si iba a salirme de la dieta al menos este era un gusto sano. Pues...

 But the next morning, when I came home and saw it, so beautiful and chocolaty and I had the munchies, I decided to give it a second chance. If I was going to misbehave,  at least this was a healthy choice. Well ...


Se le concentraron los sabores, la dulzura del cambur salió a flote, estaba esponjosa y el aroma del cacao te hacía pensar que te estabas comiendo un manjar! Me queda la duda de porque lo catalogó como pan la dueña de la receta original en Weelicious. Para mi, una torta diferente y muy sana.

 All the flavors were concentrated, the banana´s sweetness surfaced, it was spongy and the aroma of the cocoa made ​​you think you were eating a delicacy! I´m still wondering why the owner of the original recipe in Weelicous described it as bread. To me, it´s a different and very healthy cake.


Ingredientes- Incluye los cambios que le hice a la receta
 2 tazas de harina integral (pedía una de normal y una de integral)
1/3 taza de cacao en polvo sin azúcar
1 cucharadita de bicarbonato de sodio
1 cucharadita de polvo para hornear
1/2 cucharadita de sal
1 cucharadita de extracto de vainilla
1/2 taza de aceite de oliva (creo que pueden ponerle el que gusten)
2 huevos, batidos
1 plátano (cambur) machacado
1/2 taza de miel
2 tazas de calabacín, rallado

Precalentar el horno a 350 ° F./ 180º C. En un bowl, combine los primeros 6 ingredientes secos. En otro bowl grande, bata la vainilla, el aceite, los huevos, el plátano (cambur) y la miel hasta que se mezclen. Poco a poco se añaden los ingredientes secos en la mezcla y luego añade el calabacín rallado.Vierta la mezcla en un molde engrasado. Hornear durante 45-50 minutos o hasta que un palillo salga limpio. Deje enfriar durante 10 minutos, luego retire por completo del molde y deje enfriar.



Ingredientes- includes the changes I made
2 Cups Whole Wheat Flour (it said one of regular and one of whole wheat)
1/3 Cup Unsweetened Cocoa Powder
1 Tsp Baking Soda
1 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Vanilla Extract
1/2 Cup Olive oil (guess you can use another type)
2 whisked Eggs
1 mashed Banana
1/2 Cup Honey
2 Cups grated Zucchini 

Preheat oven to 350° F./ 180ºC. In a bowl, combine the first 6 ingredients. In a separate bowl, beat the vanilla, oil, eggs, banana and honey until combined. Slowly combine the dry ingredients into the mixture then stir in the grated zucchini. Pour the batter into a greased baking pan. Bake for 45-50 minutes or until a toothpick comes out clean. Cool for 10 minutes, then remove and cool completely.
