Tips for Holiday nails

No se a uds les pasa como a mi, pero tan pronto llegan las fiestas y la cocinadera que ellas representan, mis manos se ponen horribles! Resecas de tanto fregar (lo logro recordar todas las veces que tengo que usar guantes) y las uñas se me rompen y la manicure no me dura ni un día.

I don´t know if you have the same problem as I do, but as soon as the holidays begin and all the cooking and washing dishes begin,  my hands get ugly! Dry from scrubbing  (I can´t seem to  remember to wear gloves all the times) with broken nails and manicures that don´t  last  a day.

 
 1.- Buscar un endurecedor a que contenga entre otras cosas nylon. Sally Hansen´s Hard as Nails es una buena opción.

Find a nail hardener containing, among other things, nylon. Sally Hansen's Hard As Nails is a good choice.

2.- Limarse las uñas en una sola dirección y no de un lado para el otro; esto tiende a resquebrajarlas.

Filing her nails in one direction and not from one side to the other, doing this tends to break them. 



 
3.- Usar crema para cuticulas y para las uñas. Mi favorito es el tratamiento para uñas y cutículas de L´Occitane que tiene manteca de karité y aceites esenciales.

Use cuticle & cream. My favorite is the treatment for nails and cuticles from L'Occitane. It has shea butter and essential oils.
  
4.- De ahora en adelante los guantes serán mis mejores amigos.

From now on, the gloves are my BFF's
 
5.- Tomar vitaminas, especialmente esta temporada.     Take vitamins, especially this season.



6.- Siempre esta la opción de probar Shellac, así no se me desconchan aunque la billetera si


There is always the option to try Shellac, it´s good that it lasts this long because I´ve heard it´s expensive.




7.-Este no lo sabía pero dicen que es bueno ponerse protector solar en las manos si las vas a poner debajo de la lámpara UV.

This did not know but they say it's good to put sunscreen on your hands if you put under the UV lamp.
 
8.- No se de qué color me voy a vestir aun pero cualquiera de estos colores seguro que complemeta divinamente mi look.

I don´t know what I´m going to wear yet, but any of these colors will definitely work wonders for my look.




Wontons- Calabaza/Pumpkin



Como no soy amante del pumpkin pie y quería tener algo con ese ingrediente en mi menú, conseguí estos wontons con calabaza. Creo que como aperitivo pueden quedar muy ricos. Decidí hacerles unos pequeños cambios. Les coloco mi versión. Si quieren la original: Taste of Home

Doble cheese pear


Después de tanto cocinar para la cena de Thanksgiving, quería hacer algo sencillo para el postre del almuerzo de hoy. Además tenía unas peritas que estaban un poco más de allá que de acá así que perfecto. Este postre es facilito aun y así, la mezcla de sabores de los quesos con el dulce de la pera y el tangy de la reducción de vinagre balsámico es atómica . El toque final se lo dá el crunchy de la sal gruesa. Un mix de sabores que no dejará a nadie indiferente.

After all the cooking for Thanksgiving´s dinner, I wanted to do something simple for today´s dessert. Furthermore I had some pears that were about to go bad. This dessert is super easy and the mix of the flavors of the cheeses along with the pear´s sweetness and the tangy balsamic vinegar reduction is atomic. The final touch: thick crunchykosher salt. A mix of flavors that will not leave anyone indifferent.

Relleno del Pavo - Stuffing

Para mi, esta es la mejor parte del pavo. Curioso no? No tiene nada de pavo pero el hecho de que se cocina un poco más dentro del pavo le termina de dar el toque suculento y lo redondea muy bien. La receta original es de Armando Scannone, autor del mayor icono de documentación gastronomica de mi país como lo es el libro Mi Cocina a la Manera de Caracas, mejor conocido como el Libro Rojo.

For me, this is the best part of the turkey. Curious right? There's no turkey in it. It´s just that cooking it inside the turkey gives it the finishing touch and makes it succulent. The original recipe is from Armando Scannone, author of the greatest gastronomic documentation icon of my country,  the book Mi Cocina (My Kitchen) The Caracas´ Way, better known as the Red Book.
















Ingredientes

4 tazas de castañas peladas y cocidas, alredodor de 2 kgs si son con concha.
1/2 taza de piñones tostados
175 gramos de mantequilla
1 1/2 taza de cebolla picadita
8 a 10 dientes de ajo machacados
1 1/3 tazas de parte blanca y algo de lo verde  de cebollín picadito
1/2 kilo de carne magra de cochino molida gruesa
250 gramos de higados de pollo, limpios y picaditos
1 cucharadita de pimienta negra recien molida
3 o 4 cucharaditas de sal
1 cucharadita de salsa inglesa
3 ramitas de tomillo fresco- 3/4 de cucharadita si el seco, molido
2 cucharadas de Cognac ó Brandy
3/4 taza vino dulce Moscatel
1/4 taza perejil picadito
1 1/2 a 2 tazas de consomé preparado (ver receta) o consomé de carne o pollo
1/2 taza de pan rallado

Se pelan las castañas y se agregan en una olla con suficiente agua hirviendo con sal. Se lleva nuevamente a hervir y se cocinan hasta que estén blandas. Se escurren y todavía calientes se les quita la piel, se cortan en pedacitos y se ponen aparte.
En una bandeja se ponen los piñones y se doran en el horno- pendiente de que no se quemen...
En un caldero u olla grande de calienta la mantequilla y se sofríen la cebolla y el ajo hasta que estén marchitos, unos 5 minutos. Se agrega el cebollín  y se sofríe unos 7 minutos más. Se agregan el cochino, los hígados de pollo y los condimentos (sal, pimienta, salsa inglesa, tomillo, perejil)
el Cognac, vino y consomé. Se revuelve, se lleva a un hervor y se cocina unos 20 minutos. Se baja el fuego y se agregan las castañas y los piñones. Se cocina unos 10 minutos. Se agrega el pan rallado, se remueve y se cocina unos 5 minutos más. Se retira del fuego y se pone a enfríar.


Ingredients

1/2 cup pine nuts,
toasted
175 grams of butter
1 1/2 cup onions,
chopped
8-10 cloves garlic, crushed
1 1/3 cups of the white part and some of the green part green onions, chopped
1/2 kilo lean
ground pork 
250 grams chicken livers, cleaned and chopped
1 teaspoon freshly ground black pepper
3 or 4 teaspoons salt
1 teaspoon Worcestershire sauce
3 sprigs fresh thyme, 3/4 teaspoon if dry, ground
2 tablespoons Cognac or Brandy
3/4 cup sweet Moscatel wine
1/4 cup parsley,
chopped
1 1/2 to 2 cups prepared broth (see recipe) or chicken or beef broth
1/2 cup bread crumbs


Peel the chestnuts, place in a pot with boiling salted water. Bring back to a boil and cook until soft. Drain and while still warm, remove the skin, cut into small pieces and set aside.
In a pan put the pine nuts and toast them in the oven oversee them so they don´t burn ...
In a pot or large saucepan heat the butter, fry the onion and garlic until wilted, about 5 minutes. Add the onion and sauté about 7 minutes, added the pork, chicken livers and seasonings (salt, pepper, Worcestershire sauce, thyme, parsley) the Cognac, wine and broth. Stir, bring to a boil and cook about 20 minutes. Lower the heat and add the chestnuts and pine nuts. Cook for about 10 minutes, add the bread crumbs, stir and cook about 5 minutes more. Remove from heat and set to cool down.

Rainy days

Tres días de lluvia es mucho para Murcia... No sólo para la ciudad sino para el estado de ánimo también. Al tercero, debo decir que ya me pega un poco pero me encantan.  Nada mejor que acurrucarse con una rica cobija (manta como la llaman aquí)

Si tienes que salir, pues un par de botas de lluvia y un paraguas son el must! Ya lo demás is up to you. Yo sin bufanda o foulard ya no salgo, me encantan como complemento y son una forma de verte diferente todos los días. Lo mismo aplica para las carteras.

If you have to go out, a pair of rainy boots and an umbrella are a must! The rest is up to you. I don´t go out without a scarf, I love them and they are a great way to look different each  day. The same advice applies for bags.

RIP cake / Bizcocho QEPD

 Estoy más que emocionada con los resultados del curso que hice el domingo en Cupcake Factory  y con mi primera torta (tarta, bizcocho como como lo quieran llamar) con fondant! Creo que para ser la primera que hago quedó de concurso.  No les voy a decir que es fácil pero tampoco difícilísimo.... creo que más que arte culinario hay que tener creatividad e imaginar el proyecto antes de poner manos a la obra.


I am more than thrilled with the results of the class I took at the Cupcake Factory last Sunday and with  my first cake decorated with fondant! I think,  being this my very first one, it came out competition style. I will not say it's easy but not very difficult .... I think that more than culinary expertise what you should have is creativity and imagine the project before getting to work is really important.


Este es más o menos el proceso - This is more or less what you have to do



Hornear un bizcocho, la receta de este nos la dieron en el curso y se las coloco en un post aparte porsia la quiere probar. Es muy sencilla de hacer y quedó bien sabrosa.
Una vez esté bien frío se divide en dos o en tres dependiendo del tamaño del molde.

Bake a cake, the recipe for this one is from the place where I took the course and I´ll pit it in a separate post in case you want to give it a try. It is a simple one and it came out really good.
Once your cake has cooled completely, divide it into two or three parts (depending on the size of the baking pan that you used.


 Untar las capas con el ganache de chocolate (receta del curso too y la pueden encontrar aquí)
Spread a ganache chocolate layer in each cake (the recipe for the ganache can be found here)


 Cubrir la parte de arriba y los laterales también
Cover the whole cake with the chocolate mix


 Pregunté el porque de esta capa antes del fondant y me comentaron que para que se adhiera bien.
I asked for the purpose of this layer and was told that it was necessary for the fondant to stick well to the cake.


 Nuestro fondant era blanco (hicimos el fondant desde cero) y luego lo coloreamos con colorante en gel anaranjado. Hay que amasar y mucho para que quede uniforme y bueno, trabajarlo rápido para que no se seque.
Our fondant was white (we made ours from scratch) and then we colored it with gel food coloring. It´s important to knead it well so you get an even color and to work fast as well so it doesn´t get dry.


Se extiende con el rodillo muy bien hasta tenerlo lo suficientemente grande para cubrir la torta completa.
Spread it well with the roller or pin until it can cover the cake completely


 Se corta en exceso y se alisa con los impletmentos especiales (ahora no recuerdo el nombre)
Cut off the excess and smooth it with a special tool (can´t remember the name, sorry)


 Ahora sólo queda dar rienda suelta a la creatividad utilizando el fondant y los colores. Por ejemplo, para hacer la tierra utilizamos chocolate el polvo...

Now it´s time to let your imagination run wild using the fondant and different food coloring. For example, to make the dirt we used chocolate powder...
