There´s no Thanksgiving without cranberry marmalade

cranberry marmalade

It´s not the first time I prepare turkey for Thanksgiving since I live in Murcia but it´s the first time that I try this recipe. For the occasion, I wanted to accompany the turkey with cranberries, apart from the sauce that I do with the juices that come out of the turkey when you bake it. Generally, what is used is cranberry jelly (canned) but since they do not sell it here so, I decided to experiment  a little. Luckily I found dried cranberries (they look like raisins)  that was what I used. Another plus was that Hero + makes jam that has cranberries in it and that gave it a gourmet touch.

La receta es super sencilla.

gyoza sauce

We love Asian food and since we can find ready made gyozas- but with soy sauce for dipping- I decided to experiment and try to come up with a sauce similar to the one they serve at restaurants in Caracas.

It came out delicious but a little high on the garlic side, you can see that the garlics that I used were a bit big; so next time I´ll choose smaller cloves.

Sabores sevillanos

Since I am a foodie, I´m going to dedicate the first post of our trip to Sevilla to all the delicious food we ate.

Sevilla, Seville, boquerones

The first place was recommended by the hotel´s concierge. It´s located at San Jacinto Street and it´s called Miami (curious, right?) Me arrived to Sevilla on a Monday (right after Holy Week) so you can imagine there was nothing left. Only fried anchovies (boquerones) that we had with manzanilla (a typical wine) hoping to have better luck the rest of the days. Nonetheless they were delicious!

That afternoon, after walking around the city, we toasted to Gin & Tonics at a place with a breathtaking view of the city. It´s just at the begining of Isabel II bridge, from Triana to the bullring. I don´t know if the food of the place is good but the view is worth the visit.

Sevilla, Seville,

The second day, taking into consideration my cousin´s recommendations, we ate at La Bodeguita de Antonio Romero. It´s right behind the bullring and all Sevilla gathers there whenever there are bull fights. The star dish (according to the recommendations) is the Piripi a gourmet sandwich with pork, peppers and other ingredients that I´m not going to tell, so that they surprise you when you go and have them. All the other dishes that we ordered were succulent and the place was packed and very festive.

To finish our day, that night after walking around the city, we ended at the Lonja del Barranco Market, similar to the one in Madrid called San Miguel. Great cured ham, grilled prawns and red wine! A wonderful way to end the day.

Sevilla, Seville,

Another place worth mentioning is La Casa Fundida (The Molten House) at Triana´s Market. This one wasn´t on the list and we discovered it by chance (it was pouring and we were near the market) and let me tell you what a discovery! Everything was excellent!! Specially the salmorejo (kind of gazpacho -soup- made with bread, egg, pepper, tomato, garlic, salt and water, all shredded and beaten to a fine puree) and Spanish sausage (chorizo) to hell.

Hope you enjoy the recommendations and if you have other let me know!!

Joaco´s bday was on a Monday this year (2015) so we had to wait for the weekend to celebrate it (now that he´s growing up and that he has responsibilities, celebrating bdays on a weekday is a no no, lol) Nonetheless, I didn´t want him to think that it wasn´t a special day so, while he was in his extra curricular activities I  set up a special table decorated with wash tape.

I love wash tape and evrytime I spot one (no matter the store) I buy it because you can make tons of things with them, they´re super versatile and decorative.  For this project you´ll need a paper table "cloth" and lots of wash tapes. You just have to make rectangles in each place setting and that´s it! A simple and easy to make idea that screams "I love you and you're special."

I also use them to decorate gifts and give them a detodounlolo special touch. This id how Joaco´s gift came out.

These are just two examples of all the decorations you can do with wash tapes. Think of anything else?

el alma de Luzón

red wine

It has been a few days since we visited the Luzon winery. We took advantage of one of those weekends where you have nothing to do, and drove there to see the winery and taste their wine. This winery is the fruit of several winemakers and, thanks to the new stockholders- since 2005- they´ve become what they are nowadays. A modern and innovative winery were tradition and modern techniques come together.

barricas vino

During the visit they explained how the produce their wine, the time it remains in the casks, the types they use (French or American Oak) and we even visited the Sanctuary, where they keep the wine that they don´t sell and that allows them to check how they evolve over time.

botellas vino

The tour ended with a wine tasting of three of the ones they produce. A white wine and two red ones. Both very good! It would have been nicer to have a smaller group during the visit. That way the tasting would have been nor personal and detailed... nonetheless we had a great time.

Today we celebrate Chinese New Year. According to their calendar, the year 4713 and  it corresponds with the year of the goat. Since last year we made the lucky red envelopes, this time, to celebrate it we have prepared our own fortune cookies. They are not hard to make but they do take some time to prepare. So you have to be patient !! Before you begin baking have your  fortune papers ready.

If you want to know more about how to receive the Chinese New Year check this link.

Having done this, it´s time to work; to make them you'll need:

INGREDIENTES

3 claras de huevo grandes
3/4 taza de azúcar
1/2 taza de mantequilla derretida y fría
1/4 cucharadita de extracto de vainilla
1/4 cucharadita de extracto de almendra
3 cucharadas de agua
1 taza de harina para todo uso

3 large egg whites
3/4 cup sugar
1/2 cup butter, melted and cooled
1/4 tsp vanilla extract
1/4 tsp almond extract
3 tbsp water
1 cup all purpose flour

Preheat your oven to 375 degrees F or 190º C. Line a cookie pan with parchment paper or a silicone mat.

Whip the egg whites and sugar on high speed (you can use stand mixer or a hand one)  until it's frothy. Add in the melted butter, vanilla, almond extract, and water. Add in the flour and mix until it is well mixed.

Place a tablespoon of the mixture in the cookie tray  and spread it until you get 3 inch or 8cm circles. Bake 2 or 3 at a time. They cool fast and if they do you won't be able to fold them properly.

Bake your fortune cookies for 7-8 minutes, until the edges are slightly brown

Once you take your fortune cookie out of the oven, flip them and fold them in half putting the fortune paper inside. Then, with the help of the rim of a mug, fold them downwards to shape them.

fortune cookie

Place your folded cookie in a muffin pan to let cool. The pan will help to maintain the shape. Repeat the procedure with the rest of the batter.

skinny caipirinhas

C a r n i v a l  is just around the corner. What a better way to celebrate it than with caipiriñas!

This is a typical drink from Brazil made of cachaça- a locally made liqueur - lime, sugar and ice. Caipiriñas should de served with a straw. The best part is to sip from the bottom of the cocktail that´s where all the sugar and lime are. If not you´ll only taste the cachaça and that´s no fun.

For those of us that are watching our calories but still want to enjoy carnival, here´s a skinny version of this typical Brazilian cocktail.

panquecas de almendra - almond pancakes

tortitas almendra, almond pancakes, panquecas almendra

It´s been a while since I posted something in Kozonandito. So, since from now on I have my purpose of the month and that precisely this month´s one is to loose weight, I decided to post a guiltless recipe!! I give you almond pancakes. All the fun without the excess carbs (the kind that when you're on a diet you want to avoid) You can very well make them for a special breakfast on Saturday or Sunday, when you want to eat something other than the typical whole wheat bread with fat free cheese!

As always, I cooked them before posting the recipe to see how it came out- the recipe is not mine. And I can tell you that they are good. Of course, nothing like the real ones (very fattening BTW) but they´re even OK for a snack. Now, why almonds ??? Because I had a few packs of ground almonds lying around my kitchen cabinet and I didn´t want them to go to waste. So,  I looked up several Pinterest recipes until I found the one I think is perfect. It´s form Lindsay at  Delighted Momma.

Dicho esto, ¡cocinemos!
Having said that let´s cook!

diy- stirrers / removedores

I am a fan of DIY.  For those who know me and have been in my house, you know that every time I have a party, I try to have small details that make the event a special one and stamp it with the "DetodounLolo" touch that characterizes me. I was looking for ideas on Pinterest to give our New Year's party a touch of glamor (well deserved I must say) and came across these stirrers  to decorate drinks and it hit me! I could make them and it would be a cool project to do with my kiddos (which are fan of this type of activities) It is a very simple project with materials that are available in any crafts store. So let´s get to work.
