Preparativos ~ Getting ready

Estoy super emocionada. Ya sólo quedan menos de dos semanas para que mi Joaco cumpla 5 años! Se podrán imaginar los preparativos. En parte por ello es que no he escrito mucho. Más bien he estado buscando ideas, recetas, materiales de arts ´n crafts y diseñando todo lo que necesito para el gran evento. El motivo del cumple, si bien es cierto no es el más original de todos - es Cars- es lo que a él mas le gusta. Sin embargo, tengo pensado hasta el más mínimo detalle. Desde las invitaciones en forma de pase VIP - tipo las que le entregan a uno cuando va a un evento- hasta el backing de la mesa de la torta.


I'm sooooo excited. We´re less than two weeks away from my Joaco´s 5th bday! You can´t  imagine all the preparations. In part it´s why I haven´t written much. Instead, I have been looking for ideas, recipes, materials for all the DIY proyects and designing everything I need for the big event. The theme, although not the most original of all - Cars- is what he likes the most. However, I have thought through every detail. From the invitations in the form of a VIP pass - the kind they give you when you go to an event-to the backing of the cake´s table.

 
Las invitaciones las diseñé yo misma. No tienen idea de lo que me costó encontrar aquí las fundas plásticas para carnets o las cintas con los clips para sujetarlos! (por lo que opté por plastificarlas)  Lo que es no ser de aquí o tener idea de dónde se pueden conseguir las cosas. En fin, lo resolví en la tienda de los chinos, con cuerda para tender ropa y pinzas plásticas para guindar cortina jejeje!  No hay nada con ser empeñarse y ser creativo.


I designed the invitations myself. You have no idea how much I struggled to find the plastic covers for the cards or the ribbons with clips to hold them! (So I decided to cover them with those plastic machines)  It´s what happens when you´re  not from around here or haven´t the slightest idea where to find the things you need. Anyway, I solved all my issues at the Chinese shop, with clothesline and plastic clips to hang curtains lol! There is nothing like being stubborn and creative.


Tampoco pueden faltar en mi decoración mis (bueno las aprendí de mi mamá) archifamosas bandejas con papel crepe- para instrucciones de cómo hacerlas pueden ir al post que realicé para el cumple de Fiona.

Another must have at one of my parties are my (well I learned from my mom) super famous crepe-paper trays. For instructions on how to make them can go to the post I did for Fiona´s bday.
 

La cinta super cool la traje del viaje que hicimos en verano a visitar a mi hermana... así que se podrán imaginar desde cuando estoy en esta "planificación" de cumple.
 
I bought super cool crepe-paper ribbon during my summer trip to visit my sister... so guess you can imagine how long I´ve been "planning" this bday.

 


Tampoco pueden faltar los palitos para las bombas-globos, decorados con los colores de la party que si bien en esta foto no es que se vean muy bien, no saben lo bellos que se ven en los centros de mesa con los globos!
 








Another must have are these sticks for the balloons, decorated with the colors of the party theme and even though they don´t look like a big thing in these pics, you can´t imagine how awsome the look once they are on the tables with the balloons!




 He diseñado otras cosas para decorar pero que hasta que no esté todo armado no vale la pena que se los muestre... digamos que será sorpresa jejeje. Ahora sólo me queda practicar la parte de repostería (que es en la que menos me destaco) pero que seguro saldrá de maravilla!  Al igual que hice para el de Fiona, aquí habrá ponquesitos (magdalenas) con sus toppers hechos por mi y ahora quiero ver si hago cake pops! Ya les contaré que tal.

 I have designed other things to decorate the party but until it is all in place it´s not woth it to show it to you guys lol ... Let´s say that it´ll be a surprise lol. Now all that´s left is to practice my baking and decor skills (which I must confess is where I have trouble) but I´m sure it will be great! As I did for Fiona´s bday, I´ll make cupcakes with toppers made ​​by me and I also want to try to bake cake pops! I'll keep you updated lol.

Chickpea ~ chips ~ Garbanzo


Hace varios días conseguí una foto en pinterest de unas galletas de garbanzo y me llamaron la atención. Después de darle vueltas al asunto, porfin me decicí a hacerlos y déjenme decirles que wao!! A parte de súper ricos, son facilísimos de hacer y la masa una maravilla de manejar. Sobretodo para mi, que no soy una experta cocinera jejeje. Una vez hechos y por supuesto, habiéndolos probado se me ocurre que también se pueden hacer con otras hierbas. Sin más...aquí les dejo la receta. La origial es de lovefoodeat

A few days ago I found a picture of chickpea crackers on Pinterest that caught my attention. After beating around the bush for a while, I finally decided to make them and let me tell you... WAO! A part from being delicious, they are extremely easy to make and the dough is super easy to handle. Especially for me, I'm not an expert cook lol. Once made and of course after having tasted them, I thought they could also be made with other herbs. Without further ado ... I give you the recipe.

No frosting Carrot Cake


Soy amante de la torta de zanahoria! Desde que estoy aquí en Murcia sólo había comido la que hace mi cuñis, que no le queda nada mal. Sin embargo tenía ganas de hacer una yo. Me puse a buscar recetas "light" o más saludable de torta de zanahoria y después de leer y leer miles de tips y de recetas que si con piña, que si con coco... llegué a la conclusión de los ingredientes que quería ponerle a la mía- versión saludable a ver que tal.

La verdad que muy muy bien, un poco densa para mi gusto y creo que le faltó un poco más de canela... de resto yummy!!

carrot cake! Since I came to Murcia I´ve only eaten my Cunis´ carrot cake- which isn´t bad I must say. But I wanted to bake one myself. I looked for "light" or healthy recipes and, after reading and reading thousands of tips and recipes, some even called for pineapple & coconut ... I came up with my version & the ingredients I wanted to put in my healthy version. It turned out really good. Aa bit dense for my taste and I think next time I´ll add little more cinnamon ... apart from that yummy!

DetodounLolo Salad


No estoy segura si esta ensalada la ha hecho alguien antes que yo. Si es así pues bienvenidos al club! Hoy que estuve en casa toooodo el día con mi hija porque teníamos que prepararnos para unos análisis que le van a hacer mañana, se me ocurrió hacerme una ensalada "diferente" para no comer pasta con ella jejeje. Pues me fascino! Como le comenté a mi papá cuando me llamó por teléfono, mi nueva ensalada favorita! La llamaré Ensalada Kozinandito. Está crujiente, refrescante, diferente y saludable. Gracias al queso de cabra y a las nueces es un plato muy completo y a mi no me hizo falta comer más nada. También puede estar genial para acompañar carnes a la parrilla.

Not sure if someone mixed this salad  before me. If so, then welcome to the club! Today I was home aaaaall the day with my daughter. We had to prepare for some tests she has to undergo tomorrow. So,  I decided to mix a "different"salad and  avoid eating pasta which was what Fiona was having lol. Well, I was fascinatedAs I told my dad when he phoned me;  my new favorite salad! I´ll call it Kozinandito salad. It is crisp, refreshing, different and healthy. Thanks to the goat cheese and walnuts it´s very fullfilling. I didn´t eat anything else until supperIt can also be great as a side dish for grilled meats.

Cucumber Dill salad


Esta ensalada me trae recuerdos de mi niñez. La mezcla de pepino con eneldo en las ensaladas. No recuerdo bien si así era exactamente la vinagreta que se le ponía pero aqui va mi versión de la ensalada. Una forma fresca y crujiente de disfrutar del pepino y exelente acompañante de chuletas de cochino a la plancha.

 This salad reminds me of my childhood. The mixture of cucumber with dill in salads. I do not remember if this is the way the vinaigrette tasted, but here is my version of the salad. A way to enjoy fresh, crisp cucumber an excellent companion for grilled pork chops.

Melon & Peppermint Smoothie

El otro día vino una amiga a casa a trabajar en los recordatorios para la primera comunion de su hija y se me ocurrió hacer esta bebida para disfrutar de ella mientras estabamos en acción. Si bien es cierto que hacía frío y que quizá lo que apetecía era un té o cafecito, como era la hora de la merienda de la media mañana y tenía (me refiero a mi) que comer fruta, pues me decidí a innovar un poco en lo que a mi merienda se refiere y preparé este smoothie de melón verde con yerbabuena. Maravilloso descubrimiento! Resulta que estos dos son: la pareja perfecta

The other day a friend came over to work on her daughter´s First Comunion favors and I decided to make this smoothie and enjoy it while we were working. It was a cold day and it probably felt more like a tea or coffee day but, it was time for my mid morning snack and I had to eat fruit. So, I decided to innovate a little (regarding my snacks) and prepared this smoothie with peppermint and melon. Wonderful discovery! It turns out that these two are:



Comienza con las hojas de 3 ramitas de yerbabuena fresca
Start with the leaves of 3 fresh peppermint stems


 Una rodaja de melón verde
A slice of green melon


4 cucharadas de yogurt natural desnatado (puede ser edulcorado si son de paladar dulce jeje)
4 tablespoons of natural fat free yogurt (you can use sweetened if you have a sweet tooth Lol)


 Mezclar en la licuadora y listo! Me lo omagino con hielito picadito en verano y Yummy!
Blend & it´s ready to serve! I imagine zipping it in summer with crushed ice & Yummy!

Chocolate Zucchini Bread


 Cuando leí esto, tuve que hacerlo dos veces porque no me lo creía! Pan de chocolate y calabacín.... no guanté la tentación y llamé a mi Cheli (para los que no saben, es como llamo a mi esposo) que estaba en la calle y le pedí que me trajera polvo de cacao sin azúcar que era el único ingrediente de la receta que no tenía. A pesar de que era un poco tarde y de que al día siguiente había que madrugar (más de lo acostumbrado) me puse manos a la obra y lo hice con la ayuda de mis little helpers- Fiona & Joaquín.

 When I read the title, I had to do it twice because I couldn´t believe my eyes. Chocolate Zucchini Bread.... I just couldn´t wait and called my Cheli (for those of you who don´t know, it´s how I call my husband) and asked him if he could bring cocoa powder- the only ingredient of the recipe that I didn´t have. Even though it was late and that we had to wake up early, I baked it with the help of my two little chefs- Fiona & Joaquín.

Tomato cake (sweet)


Si, torta de tomate jeje. Me dió tanta curiosidad cuando vi la foto en Pinterest, que tuve que ir a la fuente a ver que tal. Después de leer la introducción y de ver lo sencillo que era prepararla y los poquitos ingredientes que llevaba, me decidí a hacerla. Pues todo un hit!!  Tanto así que la hice ayer para la cena y ya no quedan sino las migas. Le comenté a mis invitados (conejitos de india como decimos nosotros- y bien arriesgada yo que la hice justo para cuando tenía visita en casa) que no les diría de qué era hasta que la probaran... ya saben como es la gente. Seguro que si les decía de que era, antes de que se la comieran, ni siquiera la probarían.

Yes, tomato cake, lol. I was soooo curios when I saw the pick on Pinterest, that I had to take a peek. After reading her introduction and seeing that it was really easy to prepare and had few ingrediets, I decided to give it a try. Well, a huge success! So much so, that I baked it for yesterday´s dinner party and there are only crumbs left. I told my guests (guinea pigs as we call them-and well, very brave on my part, trying a new recipe with guests) that I wasn´t going to tell them the flavor of the cake until they had a piece.. you know how we are. If I had told them beforehand they probably wouldn´t have tasted it.

Chips de calabacín

Como ando en modo eat right y sano para lograr mi meta, he ido buscando recetas, por aquí y por allá, de todo tipo para variar mi menú. Soy un poco aburrida o mejor dicho soy muy poco creativa en lo que a cocinar se refiere (no me gusta)  Así que, si sólo como pechuga de pollo a la plancha y ensalada de lechuga (que es mas o menos lo que mi mente imagina que es comida de dieta) se podrán imaginar cuanto tiempo duraré a dieta o estaré sin romperla...
Since I´m in a eat right & healthy mood to achieve my goal, I´ve been searching the web for recipes to spice up my menu. I´m a little boring or better yet, not very creative when it comes to cooking (I don´t like it)  So, if I only eat chicken breast fillets and lettuce salad (which is more or less what  I imagine diet food to be like) you can bet that it won´t be long before I quit or slip...

De las recetas que he encontrado y hecho BTW (eso quiere decir que salen como se ven en las fotos y que son fáciles) y que además saben bien, la de los Chips de Calabacín es lo MAXIMO! La receta original es de thejoyofcleaneating.com Yo modifiqué la receta un poquito porque en vez de puro pan rallado (que era lo que pedían) le puse salvado de trigo y de avena y el pan en partes iguales y no le puse toda la cantidad de queso parmesano que pedían porque...let´s face it, si queremos bajar de peso pues el parmesano no es que sea de lo mas light. Aun y así quedó suculento! Me comí toda la bandeja y sin acompañante. Así que sirven tanto sólos como acompañados y lo mejor  es que están listos en 1/2 hora!


Of the recipes I´ve found and cooked BTW (that means that the come up like the photos and that are easy) and that also taste great, the Zucchini Chips recipe is the BEST! The orioginal recipe is from  thejoyofcleaneating.comI did some changes because, apart from the bread crumbs it asked for, I used some oats and didn´t used tha entire amount of Parmesan because...let´s face it, Parmesan cheese isn´t the lightest of cheeses . Any way, it turned out delicious! I ate the whole tray as a main dish. So feel free to serve them as side dish or appetizer. The best part? They´re ready in 1/2 hour!
De la receta original




  • 1/4 taza pan rallado *aqui sustituí parte por el salvado de trigo y avena
  • 1/4 taza queso parmesano rallado (opcional o pueden colocar sólo un poco o quizá otro tipo de queso)
  • 1/8 cdta. pimienta negra
  • 1/2 taza de harina
  • 1 taza de leche
  • 1 cdta. vinagre de manzana
  • 2 1/2 tazas de calabacín cortado en rodajas (son como 2 calabacines pequeños)



  1. Precalentar el horno a  425º F / 218Cº .
  2. Colocar en bowl chato las migas, el queso (si se va a utilizar) y la sal y pimienta.
  3. En otro bowl colocar la harina, la leche y el vinagre. Batir suavemente hasta que esté mezclado. Tener cuidado de no sobrebatir.
  4. Mojar los calabacines en la mezcla líquida y luego por ambos lados en la seca.
  5. Colocar los calabacines en una bandeja con papel para hornear 
  6. Hornear por 30 minutos, dandoles la vuelta a los 15 min.





  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese(guess you can use other types os cheese)
  • 1/8 tsp black pepper
  • 1/2 cup whole wheat flour
  • 1 cup milk
  • 1 tsp apple cider vinegar
  • 2 1/2 cups sliced zucchini



  1. Preheat oven to 425ºF / 218ºC.
  2. In a flat bowl or plate combine breadcrumbs, cheese and black pepper.
  3. In separate bowl add flour, milk and vinegar.  Gently stir but do not over stir.
  4. Dip zucchini slices in liquid mixture and then coat both  in dry mixture.
  5. Place coated zucchini slices on a baking sheet lined with baking film
  6. Bake for 30 minutes, turn the slices over halfway through cooking.

Sabores Venezolanos -Venezuelan Flavors


La verdad que una navidad, sin los típicos sabores venezolanos, es como si no fuese una X-mas. Por ello, este año, a parte del tradicional pan de jamón (que hace Leo mi cuñis) quise añadir a nuestra celebración un soborcito mas.... la ensalada de gallina!!! Ojo, prometo que para el próximo me lanzo con las hallacas (aprovechando que mi mami viene mañana y veo si la convenzo de que me "enseñe" o al menos me de la receta jejeje)

Christmas without the typical Venezuelan flavors isn´t X-mas at all. So this year, apart from the traditional "pan de jamón" (which my sister-in-law Leo bakes) I wanted to add to our celebration, one more flavor .... a chicken salad! Mind you, I promise that for next X-mas I´ll try to make hallacas  (taking advantage that my mom arrives to visit tomorrow, I´ll see if I can convince her to "teach" me or at least give me the recipe lol)

De toooooodas las ensaladas de gallina que he probado, la mejor la de mi Lilita (mi abuelita) A parte de que tiene ese sabor tan típico de todo lo que hacen las grandmas con muuuucho amor, no sabe a mayonesa, cosa que me complace muchiiiiiiiisimo porque no soy, en lo abosoluto, fan de la mayo! He aquí  pues el recuento de mi primera ensalada de gallina, que espero ir perfeccionando con cada X-mas, hasta llegar a ser yo la abuelita que algún día le de la receta a mi nieta.


Of aaaaaaaaaaaaaaaalllll the chicken salads I've tasted, the best one is my Lilita´s (my grandmother) A part that it has that flavor, that is so typical of everything that gandmas do with loooooots of love, it doesn´t taste like mayonnaise, which pleases me a lot. I am not a fan of mayo, at all! Without further ado, the makings of my first chicken salad, which I hope to make better and better as X-mases go by, until I  become the grandmother that will, someday, give her granddaughter the recipe.





Sudar pollo en el horno con todo los ingredientes de las fotos
 Bake chicken with all the ingredients shown in the pictures


Hervir las papas con concha, esperar a que se enfríen, pelarlas, cortarlas en cuadritos y externder en bandeja o recipiente grande. Ojo, tratar de NO cortarse el dedo en el proceso, jejeje
* No lo puedo evitar, cada vez que agarro un chuchillo me pasa

Boil the potatoes with the skin, wait until they are cold to peel them, cut them in little cubes and put them in a large tray. BTW, try not to cut your finger in the process, lol
Can´t help it, each time I use a knife it happens
 

Preparar salsa en ayudante de cocina hasta que esté bien cremoso
Blend all the ingredientes until creamy





Cortar el pollo finito en pedacitos
Cut the chicken in little thin pieces



 






y trata de divertirte porque es un tareón!
take a big breath because it´s a loooot of work!


Baña las papas con la salsa, coloca el pollo, los petit pois y los espárragos cortados a lo largo y  luego en tres
Pour the sauce, mix in the chicken, the peas and the asparragus cut in half and then in three




Mezclarlo todo bien con tenedor de dientes anchos- no con cuchara porque se apelotona
Mix it all with a fork- not with a spoon because it ends up all mushy




Colocar en un bowl, decorar y disfrutar!
Place in a bowl, decorate & Enjoy!

Descubriendo Jumilla / Discovering Jumilla

Aunque no lo crean, al día siguiente de nuestro ladies night, nos paramos "temprano" para ir en una aventura que nos dejó a todos gratamente sorprendidos. Desde que nos avisó Glendibiris que vendría a visitarnos quedamos en que esta vez, en su segunda visita a Murcia,  iríamos a descubrir más allá de la capital. Así que decidimos ir a conocer los viñedos de la zona. Preguntando por aquí y por allá me habían dicho que hay dos áreas; la de Jumilla y la de Bullas. Como en este año he probado algunos vinos de Jumilla, pues me decanté por esta y comencé a investigar. Pues bueno, déjeme decirles que nos quedamos sin días para ver todo lo que ofrece la región y más aún que por lo corto de la visita de Glenda que sólo teníamos un día para ello.

Una de las cosas que más me sorprendió fue conocer que existe  una Ruta del Vino de Jumilla. En ella hay desde rutas y visitas a diversas bodegas hasta festivales de música y ahora en noviembre una semana gastronómica. La segunda tarea fue elegir la bodega a visitar. Hay muchísimas apuntadas; desde las más tradicionales y antiguas hasta las más modernas y recientes. Al final y luego de llamar a varias para hacer la reserva nos quedamos con las Bodegas Viña Elena de la familia Pacheco- ojo me enteré al llegar que era de la familia Pacheco aunque me recordé mucho de mi Lilita (mi abuelita) que tiene el mismo apellido. Es una bodega familiar, fundada por el abuelo de la generación actual en los 50´s y que ha pasado por tres  generaciones y ello queda claramente representado en sus tres naves o bodegas. La de la foto del inicio de este post es la más actual.

Allí una guía más que encantadora nos dio un tour tanto por los viñedos como por las bodegas y nos explicó con lujo de detalle de todo. Terminamos la visita con una cata de dos vinos estupendos acompañados de unas almendras, queso de la zona y empanadillas. La verdad de todos quedamos encantados, hasta los niñitos que nos acompañaron y que estuvieron bien pendientes y entretenidos con el cuento de la explicación de cómo se hace el vino- desde verlo en el viñedo (en sus propias palabras una matica) hasta que es embotellado y etiquetado listo para la venta.

La verdad que ahora que he descubierto este puerta hacia este mundo de los vinos, bodegas y viñedos estoy más que lista para emprender visitas a varios de ellos y de beneficiarme de los sabores tan divinos de la región. Como es de esperar, salimos de la tienda con varias botellas para degustar y hasta almendras y aceite de oliva hecho por ellos mismos!

Believe it or not,  after our ladies night, we woke up"early" to go on an adventure that pleasantly surprised us. Since Glendibiris told us she was coming to visit, we agreed that this time, her second visit to Murcia, we would go to discover beyond the capital. So we decided to go to the vineyards of the area. After asking here and there, I was told that there are two main areas, Jumilla and Bullas. This year I´ve tasted some wines from Jumilla, so I opted for this one and began to investigate. Well  let me tell you that we ran out of days to see everything it offers. Specially since Glenda´s visit was soooo short and we only had one day to enjoy it.


One of the things that surprised me most was learning that there is a Jumilla Wine Route. It has from routes and visits to several wineries to music festivals and now, in November, a gastronomic week. My second task was to choose the winery to visit. There are many listed, from the most traditional and old ones to the most modern and new. In the end,we made a reservation to visit the Vineyard Viña Elene  pertainig to the Pacheco family-BTW I learned uopn arrival that the Pacheco family was the owner. It reminded me my Lilita (my grandmother) who has the same surname. It is a family winery founded
in 50's by the grandfather of the present generation and it has passed through three generations. This is clearly stated in its three warehouses. The photo in the beginning of this post is of the newst one.


Once there, a more than charming guide gave us a tour through the vineyards as well as through the  winery and explained
everything in great detail. The visit ended with a tasting of two fabulous wines accompanied by some almonds, cheese and empanadillas. We were all delighted, even the kiddos who came with us to this visit. They paid attention and were really entertained with the story of  how wine is made- from  the vineyard  (in their own words a little plant) to the bottle, labeled ready to be sold.


To tell you the truth, now that I´ve discovered this gateway to the world of wines, wineries and vineyards I´m more than ready to visit several of them and to  benefit from the divine flavors of the region. As is expected, we left the store with several wine bottles and almonds and olive oil made by them!
