Cata de Aceite de Oliva - Olive Oil Tasting

La verdad que cuando probé la primera copa con el aceite de oliva puro me sorprendí y hasta le dije a Cheli que como que era la primera vez que tomaba aceite así! Fue la verdad toda una experiencia. He estado en catas de vino, de cava y champagne, recientemente en una de quesos y ahora de aceite de oliva.  La cata fue en El Estudio de Ana de la mano de la Almazara Valle de Ricote y la mano milagrosa de Freddy Salmeron en la cocina.

To tell you the truth, when I tasted my first glass with pure olive oil I was surprised and even told Cheli that as it was probably the first time that I took it this way! It was quite an experience. I've been to wine tastings, cava and champagne ones, I was recently in a cheese tasting  and now an olive oil one. The tasting took place at El Estudio de Ana by the hand of the Almazara Valle de Ricote and Freddy Salmeron´s miraculous hand in the kitchen.

Aquí uno que otro dato aprendido durante este grata experiencia.

Almazara??? Confieso que era la primera vez que oía la palabra. Menos mal que hoy en día hay smartphones y que tengo datos  y que existe Wikipedia porque pude saber in situ lo que significaba. Para quienes aun están en blanco, aqui  les va: La palabra almazara proviene del árabe المعصرة (al-ma’sara) y significa «lugar donde se exprime» (en referencia a la aceituna u oliva). Con este mecanismo se obtiene, principalmente, aceite de oliva.


Here are some facts that I learned during this great experience. 
Almazara??? I confess it was the first time I heard the word. Luckily today we have smartphones and I have a data plan and Wikipedia exists because I knew what it meant in situ. For those of you who are still in blank, here it is: The word comes from the Arabic oil press or mill المعصرة  (al-Ma'sara) and means "place where squeezed" (referring to the olive). With this mechanism we obtain mainly olive oil.

El color de aceite no es un factor importante a la hora de determinar su calidad; razón por la que las copas de cata son azules... para que el ojo no engañe al paladar jejeje... El color del aceite depende de la variedad de aceituna que se utilice para hacer el aceite y de la época en que se haya recolectado. Hay mas de 262 variedades de aceitunas en España.

The color of oil is not an important factor when determining its quality, reason why the tasting glasses are blue ... so that the eye does not deceive the palate lol... The color of the oil depends on the olive variety used to make the oil and the time in which it was collected. There are over 262 olive varieties  in Spain.




Las olivas crecen en el Mediterráneo, California, Sur América, Sur Africa, China y Australia.  Todos producen aceite y guess what? a todos les gusta el suyo...  Asturias no produce olivas y España produce el 40% del aceite de oliva del mundo. Unas 1.6 millones de tons mientras que el resto del mundo produce 1.9 millones tons. Los españoles consumen 12 kg de aceite de oliva por persona por año y el resto del mundo sólo 0.4kgs (a excepción del la cuenca del Mediterráneo)
 Hacen falta 5kgs de aceitunas para obtener 1 lt de aceite de oliva.



Olives grown in the Mediterranean, California, South America, South Africa, China and Australia. All produce olive oil and guess what? everyone likes theirs... Asturias does not produce olives and Spain produces 40% of the world's olive oil. Some 1.6 million tons while the rest of the world produces 1.9 million tons. The Spanish eat 12 kg of olive oil per person per year while the rest of the world only 0.4kgs (except the Mediterranean)

Hablando de ese Lt de aceite... Pues hay de distintas categorías
Virgen extra 100% oliva y sin defectos
Virgen 100% oliva y tiene ligeros defectos de oxidación o fermentación
Aceite de Oliva: mezcla de aceites refinados y de aceite virgen

Speaking of that bottle of olive oil ... There are different categories 
Extra Virgin Olive Oil 100%  olives and flawless 
Virgin Olive Oil 100%  olives and has slight defecst in oxidation or fermentation 
Olive Oil: a blend of refined oils and virgin ones


Ahora al business, esa noche catamos 4 variedades: Changlo real, Cuquillo, Arbequina y Picual. De los cuatro, mi favorito el Cuquillo (que según es el equivalente al Manzanillo)
Para catar la copa debe estar caliente. Por ello se sostiene con ambas manos y se tapa para que no se evapore el olor. Una vez destapado se huele y bueno, aqui como con el vino y todo las demás cosas que uno huele. A cada quien le parece que huele a... y que le recuerda a...  Después se prueba y uff como decía al inicio es super curioso y la verdad que una sorpresa.

Changlo real: olia muy bien y me recordó a la ensalada capresa que había cenado la noche anterior. Al probarlo al inicio parecía que no sabía a nada y luego BAM! picaba en las amigdalas un montón. Menos mal que el picor no era persistente.
El Cuquillo era mas denso y oleso en boca para mi, aunque dijeron que no tenía tanto cuerpo como el anterior. Definitivamente mucho menos picante que el Chenglo.
Arbequina: era balanceado y seguro quedaría muy rico con pan... allí lo que teníamos para la limpieza del paladar entre uno y otro era manzana verde asi que tendré que comprar una botellita de este oro amarillo para quitarme el antojo.
Picual: este parece inofensivo al inicio, es de los que podríamos llamar pica pasito, comienza suave y al final pica.

Now down to business. That night we tasted four varieties: Changlo real, Cuquillo, Arbequina and Picual. Of the four, my favorite one was Cuquillo (which, according to them is the equivalent to the Manzanillo variety)To taste it the oil should be warm. Thus you should hold the glass with both hands. It should be covered so the smell does not evaporate. Once uncovered smell it and, here as with wine and everything else that you smell,  each one expresses what they smell ... and what it reminds them of ... And then, you taste it and Uff  as I said at the beginning it´s super funny and a real surprise.

Real Changlo: smelled good and it reminded me of the Caprese salad I had eaten the night before. When you taste it, at the begining it seemed it did not taste at all and then BAM! your tonsils sting a lot.
Luckily it was not a persistent itching.Cuquillo was  more dense 
in my mouth but they said it did not have as much body as the one before. Definitely a lot less spicy than the last one.Arbequina: balanced and it sure would taste wonderful with bread ... There, what we had to clean the  palate between each oil  was green apple. So I'll have to buy a bottle of this yellow gold to take care off the craving lol.Picual: this one seems harmless at first but then bewareit turns spicy.

pancakes


Nada mas rico que unas buenas pancakes. He probado muchas recetas, cada vez que quiero hacer unas me meto en internet y pongo en Google o en Pinterest "pancakes" y veo las fotos y las que se vean mas suculentas son las que preparo... Sin embargo después de mucho darle vueltas al asunto tengo varias favoritas. Las tradicionales de Buttermilk**, que son una delicia o las de Martha Stewart que son sencillas y siempre salen bien. Recientemente me he cambiado a las de harina integral y light, que dejenme decirles salen ricas y con menos calorias!

Para un día especial hasta me pongo creativa y las corto con cookie cutters. A los kiddos les encanta! Toppings? Yo soy de maple syrup pero como a ellos no les gusta (pueden creerlo???) pues nevazucar, miel y hasta mermelada hemos probado. Todo acompañado con un buen vaso de jugo de naranja y café recien hecho para un desayuno de reyes y perfecto para muchas ocasiones.



There´s nothing better than good pancakes. I've tried many recipes, every time I do, I go online and Google or search on Pinterest for "pancakes" see the photos and make the ones that look more succulent... However after much trial and error I have several favorites. Traditional Buttermilk ones, which are a delight or Martha Stewart´s  that are simple and always go well. I recently switched to whole wheat and light, let me tell they come out delicious and with less calories!

On special days I get creative and cut them with cookie cutters. The kiddos love it! ToppingsI am a  maple syrup kind-a-girl but they don´t  like (can you believe it???) So we´ve tried powdered sugar, honey and jamAll served with a glass of orange juice and fresh coffee for a breakfast of kings and perfect for many occasions.

Trip to Sierra Nevada


Después de tres inviernos en Spain, finalmente lo logramos! Fuimos a la Sierra Nevada a ver la nieve. Tomamos la decisión casi de un día para otro así que durante la semana se podrán imaginar el corre corre para conseguir todo lo que hace falta para ir a la nieve. Desde ropa interior térmica hasta las gafas para protegerte del sol (y menos mal! porque como verán en las pics casi ni nos las quitamos, jejeje)


En cuanto a la ropa interior térmica, y si son de por estos lares, las de Decathlon resultaron fabulosas, a muy buen precio y estuvimos calenticos todo el tiempo y eso que hasta estuvimos revolcándonos en la nieve! La mayor parte de la ropa la compramos en Sport Zone y como estamos justo en época de rebajas pues mejor aun!


After three winters in Spain we finally did it! We went to Sierra Nevada to "see" the snow. We decided to go almost overnight so you can imagine how hectic it as during the week in order to get everything you need to go to the snow. From thermal underwear to glasses for protection from the sun (and thank goodness! Because as you will see in the pics we barely took them off, lol)

 
As for thermal underwear, and if they are from around here, the ones sold by Decathlon were fabulous, great price and we managed to stay warm throught the day even while wallowing in the snow! We bought most of the clothes at Sport Zone and since it´s annual sales time, even better!



Como era la primera vez que íbamos buscamos un hotel céntrico, nada muy lejos de donde esté la acción. En nuestro caso fue el Ziryab, una belleza y lo mas importante para nosotros, que nos dejaran quedarnos a los cuatro en una misma habitación. No en todos los hoteles se permite eso y mis kiddos son muy peques para quedarse ellos solos en otra.


Como les comenté al inicio, el motivo del viaje era ir a ver la nieve. Los kiddos nunca la habían visto y no pasaba un día que no dijesen "Mama, queremos ir a la nieve" Así que, monitoreando el canal del tiempo pues vimos que justo ese finde nevaría en Sierra Nevada y si que nevó!!! No dejó de hacerlo desde que llegamos el viernes por la noche y todo el sábado.... hasta nos tocó la famosa ciclogénesis explosiva!!! así que falta de nieve no hubo....


Since it was our first time in Sierra Nevada  we booked a hotel near the main square, nothing too far from where the action takes place. In our case it was the Ziryab, beautiful and most importantly for us, they let us stay in the same room. Not all hotels allow that and my kiddos are too young to stay by themselves in a room.


As I mentioned at the beginning, the purpose of the trip was to go see the snow. The kiddos had never seen it and not a day went by that they didn´t tell me "Mama, we want to go to the snow" So, monitoring the weather channel, we saw that that precise weekend it would snow at Sierra Nevada and boy did it snow! It snowed from Friday night and Saturday all day long ....we were there during the famous explosive cyclogenesis! so there was no lack of snow ....


Menos mal que como dicen después de la tormenta viene la calma porque le domingo amaneció que parecía otro sitio y la verdad que pudimos apreciar lo bonito que es aquello. Lastima que como el sábado hasta cerraron las pistas pues no pudimos esquiar... así tenemos excusa para volver jejeje.


Good thing that, as the saying goes, the sun always comes out after the storm because on Sunday moring it came out and it was as if we were in a different place and we could really appreciate how beautiful it is. Too bad that they closed all the slopes on Saturday and we could not ski ... this way we have an excuse to come back, lol.

Caraotas Caraqueñas - Caracas Style Black Beans


No saben cuánto me gustan las caraotas (bueno, todo tipo de granos en general) Además he estado leyendo que son super buenas para la salud y forman (ahora) parte de mi plan para adelgazar. La historia behind this en el libro The Princess Plan Asi que para poner manos a la obra decidí hacerme unas caraotas. Utilicé una receta del blog del que saqué la del pan de jamón. Bueno con unos changes jejeje.

Pan de Jamón

Fue toda una odiasea pero valió la pena. A la tercera navidad finalmente me atreví y lo hice. Me quedó, a mi gusto, fenomenal. Le faltó un poco de jamón- nada que no tenga remedio la próxima que lo haga. Los intrinculis los encontrarán en Kozinandito... aquí sólo una que otra foto para que les pique la curiosidad...La receta original es Scannone. Unos dicen que la de Claudio Nasoa es mejor. Cuestión de gusto o las  de ganas de pasar horas en la cocina... jejeje. La que hice me encantó. Ya les contaré el año que viene si se me decido a hacer otra. Por los  momentos,  esta es atómica!

It was quite an ordeal but it was worth it. It´s my third Christmas here & I finally dared to do it. It came out, to my taste, phenomenal. Next time I´ll sure add a lot more ham. For the recipe & the makings click on Kozinandito ... you´ll only find some nice to have pics here...The original recipe´s from  Scannone . Some say that Claudio Nasoa´s  better. A matter of taste or the desire to spend hours in the kitchen ... lol This one I loved. I'll tell you next year if I decide to do the other one. For now, this one´s atomic!

Cotillón Nochevieja

 Después de mucho buscar la verdad es que no me gustó nada de lo que ví en las tiendas para el cotillón de Nochevieja.  Así que, como ya me conocen me puse manos a la obra para hacer el mío...La verdad que fue bien sencillo hacerlos y el efecto estupendo! Había con plumas amarillas y rosas para elegir y la próxima como que comienzo antes y les coloco más cosillas porque fueron todo un hit!


After looking around everywhere, I couldn´t find something that I liked for New Year´s Eve party. So I decided to make my own masks...It was really easy and they looked fabulous. I made them with pink or yellow feathers (so you could choose) and next year I´ll definitely make them again but earlier. This way I can put lot´s of more stuff on them lol!

Nada que un poco de pintura metálcia en spay y un poco de escarcha (o de purpurina como la llaman por estos lares) no pueda arreglar....
Nothing that a little metallic spray paint and some glitter can´t fix...
Luego, para evitar que la liga esa de medio mentira que le ponen se rompiera al primer intento de ponerse la mask, le puse una cinta de esas que se usan para empaquetar regalos. En realidad era lo que tenía a mano. Creo que con una liga más gruesa y más larga quedarían mejor... Punto a tomar en cuenta para las próximas que haga....
Then, in order the avoid the usual breaking of the super tiny piece of rubber that they come with, I replaced it with some red string- the type that you use to gift wrap. It was what I had in hand but if I do make them again I´ll definitely use a thicker and longer rubber band.
Una plumita por aqui, otra por allá y VOILA! A feather over here, another over there and VOILA!
Ahora sólo faltan las modelos... Let´s see them on the models...

It´s beginning to smell a lot like X-mas


No hay nada mejor que el olor a canela, chocolate o algún otro ingrediente suculento que queda en toda la casa después de hornear galletas. Esta vez hice el intento de ser chef galletera con una pinwheels. Recuerdo que las hice una vez con mi mami y déjenme decirles que son un rollo. Saben a gloria pero dan un poco de trabajo.... Como de costumbre, mis pinches me ayudaron en todo. A poner los ingredientes en la batidora, a aplanar la masa con el rodillo y a chuparse todas las paletas con la mezcla.... Sin ellos y su ilusión por ayudar no hubiese sido posible...
El destino de las cookies? Unos paqueticos de lo mas cute que le dimos a las teachers por X-mas.

There is nothing better than the smell of cinnamon, chocolate or other tasty ingredient left in the house after baking cookies. This time I made the attempt to become a chef baking pinwheels. I remember that I once baked some with my mom and let me tell you they are a pain. They taste delicious but  they sure give you tons of work .... As usual, my scullions helped me to put the ingredients in the blender, to roll the dough with a rolling pin and of course,  sucking all the spoons with the left over batter.... Without them and their enthusiasm it wouldn´t have been possible ...
The destiny of the cookies? Very cute cookie bags we gave the teachers for X-mas.

Ingredientes

 
1 1/4 taza de mantequilla sin sal (2 ½ barras), a temperatura ambiente
1 ½ taza de azúcar en polvo
1 huevo
3 de taza de harina, y más par estirar la masa
1/2 cdta. sal
1/4 taza de cacao en polvo sin azúcar

En una batidora eléctrica, batir la mantequilla, el azúcar y el huevo a velocidad media hasta que esté suave y esponjosa. Reduzca la velocidad y agregar la harina y la sal, mezclando hasta que se forme una masa. (Es posible que tengas que usar las manos para darle forma de pelota.)

Retira la masa del bowl y dividela por la mitad. Coloca una de las mitades de nuevo en la batidora y agrega el cacao. Batir a velocidad baja, hasta que esté bien mezclado.

Divide cada sabor de la masa por la mitad. En una superficie enharinada, extiende la masa sin chocolate en forma de rectángulo. Corta los bordes para que queden rectos. Repite con la masa de chocolate. Coloca la mas de chocolate encima de la otra y enrolla con fuerza. (Es posible que tengas que usar un cuchillo o espátula de metal debajo de la masa para despegarla del mostrador.)

Repite con el resto de la masa.

Envolver con envoplast. Refrigerar hasta que esté firme, aproximadamente 1 hora. Se pueden congelar también.

Para hornear, precalentar el horno a 350ºF / 170ºC. Quitar el envoplast  y, con un cuchillo afilado, cortar rebanadas into1/4-inch. (Si se utiliza la masa congelada, deje reposar a temperatura ambiente 15 minutos antes de rebanar.) Colocar las rebanadas en una bandeja para hornear sin engrasar y hornear durante 13 a 15 minutos o hasta que estén doradas en los bordes.


Ingredients
1 1/4 cup unsalted butter (2 ½ sticks), at room temperature
1 ½ cup powdered sugar
1 egg
3 cup flour, plus more for rolling out dough
1/2 tsp. salt
1/4 cup unsweetened baking cocoa powder


In an electric mixer, beat the butter, sugar and egg on medium speed until light and fluffy. Reduce speed and add flour and salt, mixing until a dough forms. Form into a ball.
Remove dough and divide in half; return half to the mixing bowl. On low speed, beat in cocoa powder until mixed.

Divide each flavor of dough in half. On a floured surface, roll plain dough into a rectangle. Shape the edges to make all sides straight. Repeat with the chocolate dough, then place it on top of plain dough and roll up tightly. You may need to run a knife or metal spatula under the dough to loosen it from the counter.
Repeat with remaining dough.

Wrap logs tightly in plastic wrap. Refrigerate until firm, about 1 hour, or place in freezer.
To bake, preheat oven to 350ºF / 170ºC. Unwrap and slice with a sharp knife, if using a frozen dough, let sit at room temperature 15 minutes before slicing. Place slices on an ungreased cookie sheet and bake for 13 to 15 minutes or until golden around the edges.
