It´s beginning to smell a lot like X-mas


No hay nada mejor que el olor a canela, chocolate o algún otro ingrediente suculento que queda en toda la casa después de hornear galletas. Esta vez hice el intento de ser chef galletera con una pinwheels. Recuerdo que las hice una vez con mi mami y déjenme decirles que son un rollo. Saben a gloria pero dan un poco de trabajo.... Como de costumbre, mis pinches me ayudaron en todo. A poner los ingredientes en la batidora, a aplanar la masa con el rodillo y a chuparse todas las paletas con la mezcla.... Sin ellos y su ilusión por ayudar no hubiese sido posible...
El destino de las cookies? Unos paqueticos de lo mas cute que le dimos a las teachers por X-mas.

There is nothing better than the smell of cinnamon, chocolate or other tasty ingredient left in the house after baking cookies. This time I made the attempt to become a chef baking pinwheels. I remember that I once baked some with my mom and let me tell you they are a pain. They taste delicious but  they sure give you tons of work .... As usual, my scullions helped me to put the ingredients in the blender, to roll the dough with a rolling pin and of course,  sucking all the spoons with the left over batter.... Without them and their enthusiasm it wouldn´t have been possible ...
The destiny of the cookies? Very cute cookie bags we gave the teachers for X-mas.

Ingredientes

 
1 1/4 taza de mantequilla sin sal (2 ½ barras), a temperatura ambiente
1 ½ taza de azúcar en polvo
1 huevo
3 de taza de harina, y más par estirar la masa
1/2 cdta. sal
1/4 taza de cacao en polvo sin azúcar

En una batidora eléctrica, batir la mantequilla, el azúcar y el huevo a velocidad media hasta que esté suave y esponjosa. Reduzca la velocidad y agregar la harina y la sal, mezclando hasta que se forme una masa. (Es posible que tengas que usar las manos para darle forma de pelota.)

Retira la masa del bowl y dividela por la mitad. Coloca una de las mitades de nuevo en la batidora y agrega el cacao. Batir a velocidad baja, hasta que esté bien mezclado.

Divide cada sabor de la masa por la mitad. En una superficie enharinada, extiende la masa sin chocolate en forma de rectángulo. Corta los bordes para que queden rectos. Repite con la masa de chocolate. Coloca la mas de chocolate encima de la otra y enrolla con fuerza. (Es posible que tengas que usar un cuchillo o espátula de metal debajo de la masa para despegarla del mostrador.)

Repite con el resto de la masa.

Envolver con envoplast. Refrigerar hasta que esté firme, aproximadamente 1 hora. Se pueden congelar también.

Para hornear, precalentar el horno a 350ºF / 170ºC. Quitar el envoplast  y, con un cuchillo afilado, cortar rebanadas into1/4-inch. (Si se utiliza la masa congelada, deje reposar a temperatura ambiente 15 minutos antes de rebanar.) Colocar las rebanadas en una bandeja para hornear sin engrasar y hornear durante 13 a 15 minutos o hasta que estén doradas en los bordes.


Ingredients
1 1/4 cup unsalted butter (2 ½ sticks), at room temperature
1 ½ cup powdered sugar
1 egg
3 cup flour, plus more for rolling out dough
1/2 tsp. salt
1/4 cup unsweetened baking cocoa powder


In an electric mixer, beat the butter, sugar and egg on medium speed until light and fluffy. Reduce speed and add flour and salt, mixing until a dough forms. Form into a ball.
Remove dough and divide in half; return half to the mixing bowl. On low speed, beat in cocoa powder until mixed.

Divide each flavor of dough in half. On a floured surface, roll plain dough into a rectangle. Shape the edges to make all sides straight. Repeat with the chocolate dough, then place it on top of plain dough and roll up tightly. You may need to run a knife or metal spatula under the dough to loosen it from the counter.
Repeat with remaining dough.

Wrap logs tightly in plastic wrap. Refrigerate until firm, about 1 hour, or place in freezer.
To bake, preheat oven to 350ºF / 170ºC. Unwrap and slice with a sharp knife, if using a frozen dough, let sit at room temperature 15 minutes before slicing. Place slices on an ungreased cookie sheet and bake for 13 to 15 minutes or until golden around the edges.

Degustando a un Venezolano

En la búsqueda de sitios en donde celebrar la comunión de Fiona me topé con El Estudio de Ana y en él con un venezolano- Freddy Salmerón. No saben la emoción y el orgullo (porque déjenme decirles que cocina divino) y la emoción por encontrar por estos lares a un venezolano. Ya habíamos probado su arte culinario cuando fuimos a una cata que celebraron. Esta vez fuimos al restaurant, sitio elegante y a la vez acogedor en donde pudimos degustar una de sus últimas promociones. Nada mas y nada menos que 10 platos!!
Me dediqué a tomarles foto  a todos los platos para que los futuros asistentes a la comunión empiecen a salivar, jejeje.
PS: Quienes me leen en Murcia, no dejen pasar la oportunidad, es sencillamente espectacular!


In my search for venues to celebrate Fiona´s 1st Communion, I came across El Estudio de Ana (Ana´s Study) and in it a Venezuelan- Freddy Salmeron. You can´t imagine my excitement and pride (because let me tell you he cooks delicious) and excitement because I found, a Venezuelan in these far away lands . We had already tested his culinary arts, when we went to a tasting that took place @ the studio. This time, we went to the restaurant, an elegant yet warm place, where we had one of their latest promotions. Nothing more and nothing less than 10 dishes!

I set out to take pictures of  all the dishes so that the future attendees of Fiona´s Comunions can start  to salivate lol.

Oda al Queso - Ode to Cheese

Recientemente estuve una cata de quesos con el Director Técnico de La Fromagería del Mercado de San Miguel, José Luis Martín. Según él un queso de calidad es la suma de muchos pequeños detalles.  Antes de entrar en el cuidado- lo que más me gustó de la exposición no vaya a ser que uno se compre un super queso y por no cuidarlo bien lo eche a perder...., creo que puedo hablarles un poco de su clasificación. Esto nos ayudará más adelante en la selección y en el cuidado.

I went to a cheese tasting a few days ago with José Luis Martín, technical director of the Fromagería @ the San Miguel Market.  According to him a good cheese is the sum of many small details. Before  entering on the subject of caring for the cheese- what I liked most about the exhibition- let´s face it we don´t want to ruin good expensive cheese because we didn´t know how to take good care of it  .... I think I can speak a bit of the classification. This will help us later in the selection and care topics.


Los quesos pueden clasificarse de varias formas. Por ejemplo puede ser por su tipo de leche.- si ésta es termizada o pasteurizada. Los que no son pasteurizados conservan su flora autóctona lo que les otorga un sabor distinto. Pueden clasificarse también por su tratamiento térmico o por su tipo de coagulación. Aquí el cuajo, dependiendo de como se trate, le otorgará características al queso. A algunos los hará elásticos y de alta conservación como el Emmental o el Parmigiano Reggiano,  los de coagulación mixta no requieren prensado ejemplo de ellos son el Brie o el Camembert; los hay de cuajo vegetal como las Tortas del Casar. Los de coagulación ácida o láctica como los quesos de cabra tampoco requieren prensado, tienen muy poco cuajo y son de fuerte acidificación. Mientras que a los azules se les añade penicillium o pan enmohecido para lograrlos. También se pueden clasificar según el tiempo de maduración- un queso de vaca a los 3 meses quizá ya pueda catalogarse como maduro mientras que eso nunca podría decirse de uno de cabra- o según el tipo de leche (vaca, cabra, oveja) según el contenido graso, su tamaño y hasta su textura.

Cheese can be classified several ways. For example it may be by type of milk. - If it is thermised or pasteurized. The ones that are not pasteurized retain their native flora which gives them a distinct flavor. They can also be classified by heat treatment or by type of clotting. By clotting and depending on the technique used, the rennet  will give the cheese its characteristics. Some come out  elastic and can last a long time such as Emmental or Parmigiano Reggiano, there are also mixed coagulation ones that don´t require pressing. Example of these are the Brie or Camembert, others can be made from vegetable rennet as the Tortas del Casar. The lactic acid or coagulation such as goat cheeses do not require pressing, have little rennet and their acidification is strong. While the Blue ones come out of  adding
penicillium or moldy bread to them. Cheese can also be classified according to the time of ripening- A cheese from cow´s milk that´s 3 months old may already be categorized as mature while that could never be said of a goat one -or by the type of milk (cow, goat, sheep) by fat quantity, size and even texture.

Como pueden ver son muchas las variables a tomar en cuenta a la hora de clasificarlos y para conocer cuándo puede un queso estar en su punto óptimo. Para ello entra en escena el Afinador, un técnico conocedor a fondo de todos los estadios del queso que con constancia y trabajo en las cavas sabe elegir según el tiempo de maduración y el tipo de queso, cuando éste está en su mejor momento. Claro está, también hay que tener en cuenta los gustos del consumidor.... Por ejemplo, un Camembert puede tener 3 etapas para consumirse; desde semi crudo, pasando por un cremoso fundente con color paja, hasta que esté a punto de degradarse con un leve sabor a amoníaco... También hay que estar pendiente de la corteza del queso- dicen las malas lenguas que: "Mientras más fea ésta sea mejor está por adentro el queso" Aun y así son muchos los mercados que prefieren las cortezas bonitas, pintadas, uniformes y sin desperfectos. Esto, sin embargo, frena la evolución del queso.

Si, la evolución porque no podemos olvidar que el queso es un producto vivo, que cambian con el pasar del tiempo y se va transformando poco a poco hasta llegar a nuestro paladar. Es por ello que debemos tomar en cuenta algunos detalles para conservar y cuidar el queso.
  • Importante controlar tanto la humedad como el frío, éste no debe ser directo ya que seca y agrieta el queso.
  • Se debe conservar en papel grueso - de tipo alimentario- y no en plástico.
  • Mientras mas blando y mas pequeño sea el queso mas humedad y poca velocidad de aire necesita.
  • El Brie y el Camembert deben envolverse en un paño húmedo para que sigan evolucionando; o se coloca con un vaso se agua en el sector en donde van las verduras en la nevera. Estos no deben comprarse si huelen a amoníaco y duran de 2-3 semanas.
  • Al Munster o al Acehuche se le lava la corteza amarilla-narajana con agua con sal.
  • Los azules son más delicados. Es recomendable no comprar más de 1 kg a la vez. Tampoco si tiene mucho o poco moho. Debe estar equilibrado y sólo debe "picar" al final. Bien conservado un queso azul puede durar hasta 2 meses.
  • Los quesos duros son más duraderos y menos delicados. Si les sale moho en la corteza no pasa nada, es parte de su personalidad y se debe a que no está pintada con antifungicos.
  • Una vez hayamos cortado el trozo que vamos a utilizar, agarrar un cuchillo y untar la grasa que haya soltado el queso con un cuchillo. Así este se sella y sigue madurando. Razón por la que es mejor comprar piezas grandes y que estén cerradas de queso Manchego por ejemplo, que pedazos pequeños de 250grms.
  • Los quesos de oveja son los que mejor se conservan, sufren menos porque son mas grasos.
  • Es importante tener el cuenta la temperatura fuera de la nevera. Si el queso suda, se liberan las grasas y éste se reseca y pierde calidad.
  • Si quiero que el queso siga evolucionando se debe mantener entre 8º y 14Cº. En cambio si quiero pararla se debe mantener entre 2º y 4ºC.
  • Una vez cortado el queso se tempera a los 30 min. y está listo para degustar.

  • Once we cut the piece that we will use, grab a knife and spread the fat that has been released in the cheese with a knife. This will seal it  and it will continues to mature. This is why it is better to buy large pieces that are closed ie Manchego cheese, instead of  small 250grms pieces.
  • Sheep cheeses are the ones that can last longer, they suffer less because they are more fatty.
  • It is important to take into account the temperature outside the refrigerator. If cheese sweats, fats are released and it becomes dry and loses quality. 
  •  If you want the cheese to continue to evolve, it should be kept between 8 and 14C º. But if I want to stop it, it must be kept between 2 º and 4 º C.
  • Once cut, cheese reaches its optimal temperature after 30 min. and is ready to taste and enjoy. 


Como un buen queso es la suma de muchos detalles, no sólo debemos sacarlo con tiempo para degustarlo. Es preciso que cada uno tengo su utensilio adecuado. Los quesos duros se cortan con cuchillo de doble mango y los Manchegos con cuchillo normal. Los blandos y los de corteza húmeda como los rulos de cabra con hilo y un Brie joven con cuchillo de huecos. Los quesos saben distinto cerca de la concha y vice versa. Cada uno debe ser manejado con metodología, cuidado y con cariño para que así nos brinde todo su potencial y a la hora de degustarlo podamos disfrutarlo a todo dar.

Since a good cheese is the sum of many details, not only do we have to take it out in time to enjoy it. It is also necessary to have the right utensils. Btw. los quesos que degustamos los proporcionó la Lechera de Burdeos, que como indican en su página web, nace con la ilusión de convertirse en un punto de reunión de amantes del queso y artesanos productores, de profesionales de la alta restauración y de expertos catadores. Este sitio ya lo habíamos descubierto Fonse y yo en una de sus visitas y es punto de obligada visita para quienes AMAMOS el queso. Ese día catamos un Epoise, un Tete de Moine, un Gruyere D´Alpase, un Saint Maure, un Manchego y un Shorpshire- este último uno que nunca había probado y para mi el mejor de la cata!

Btw, the cheeses we tasted that day were provided by La Lechera de Burdeos. As they state on their website they opened their store longing to be the place where cheese lovers, artisans and producers, people in the restaurant business and experts could get together to enjoy good quality cheese. My mom and I found this place a while ago on one of her trips and it´s a must go to place for those of us who LOVE cheese. That day we had an Epoise, a Tete de Moine, a Gruyere D´Alpase, a Saint Maure a Manchego and a Shopshire- the last one a totally new one for me and definitely the best one!

Pie dough - Masa de pie

Nunca había hecho un pie pero pensé que sería una buena opción como postre para la comida de la visita que hicimos a la casa de campo en Archivel (a 0ºC grados!!) Después de mucho buscar me decidí por esta masa básica para pie que conseguí en  The Pie Academy. Me resultó fácil de hacer y una vez horneado estuvo muy buena.
Para el relleno tenía dos frutas. En esa misma página conseguí una opción que además incluía una tercera, higos... me pareció que podía quedar delicioso. En efecto así fue... Three fruit pie


I´d never baked a pie but I thought it would be a good choice for the dessert @ our visit to the cottage in Archivel (about 0 ° C degrees!) After much searching, I decided on this basic pie dough from The Pie Academy. It was easy to make and once baked was very good.

For the filling I had two fruits. On that same page I found an option that included a third one, figs ... I thought it could be delicious. Indeed it was... Three fruit pie
